Proper Hospitality is seeking a Chef de Cuisine to join the Heart of House at Montauk Yacht Club, our 107-room luxury property within The Collective.
Spanning 35 acres on Montauk’s Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities.
The Chef de Cuisine will assist in leading our culinary team to deliver world-class dining experiences that blend creativity, precision and luxury. This individual will oversee all aspects of the kitchen, from menu creation and food preparation to team management and operational excellence. The ideal candidate is a passionate and innovative leader with a deep appreciation for locally sourced ingredients, sustainable practices and the art of fine dining.
Key Responsibilities:
Leadership & Team Management
- Recruit, train, and mentor a high-performing culinary team
- Foster a positive and collaborative kitchen culture, promoting creativity and excellence
- Manage scheduling, performance evaluations and professional development for kitchen staff
Kitchen Operations
- Ensure all food preparation meets the highest standards of quality, presentation, and consistency
- Oversee inventory management, procurement, and cost control to maintain profitability
- Maintain compliance with health and safety regulations, including food safety protocols
Guest Experience
- Collaborate with the Food & Beverage Managers to ensure seamless service and memorable dining experiences
- Engage with guests to gather feedback and build a reputation for exceptional culinary offerings
Innovation & Sustainability
- Stay informed about culinary trends and integrate innovative techniques into menu development
- Champion sustainable practices in sourcing, waste management, and energy use within the kitchen
Qualifications:
- Proven experience as a Chef de Cuisine, Executive Chef, or similar leadership role in a luxury hotel or fine-dining restaurant
- Strong culinary skills with expertise in [specific cuisine, e.g., modern French, Mediterranean, farm-to-table, etc.
- A deep understanding of food safety, kitchen operations, and inventory management
- Excellent leadership, communication, and organizational skills
- A commitment to sustainability and the use of locally sourced, high-quality ingredients
- Culinary degree or equivalent professional experience
